1. Chicken Parmesan Casserole
- ¾ pound rigatoni pasta
- 32 oz. marinara sauce
- 3 cups mozzarella cheese, shredded & separated
- 1/3 cup Parmesan cheese, finely grated
- 2 small boneless skinless chicken breasts
- ¾ cup flour
- 2 teaspoons seasoned salt
- 1/4 teaspoon pepper
- 2 eggs
- 1 ½ cup Italian breadcrumbs
- ¾ cup vegetable oil
- 2 Tablespoons butter
- Fresh Parsley, to garnish
- TIP: Bread the chicken while waiting for the pasta water to come to a boil and while you wait for your pasta to be cooked.
Make the Pasta
- Boil water, then cooks the rigatoni in one minute, less or more than the al dente mark. (Refer to the package for cooking instructions).
- Once the pasta is cooked remove it from the pot and add it back into the pot. Add 32 oz. of sauce with 1/3 cup of Parmesan cheese along with 1 cup mozzarella. Set aside.
Cook the chicken
- Clean the chicken using towels, and cut it into strips about 1/8 inch thick.
- Establish an assembly line for the breading of the chicken:
- Bowl 1: 3/4 cup of flour + 2 tsp salt that has been seasoned and 1/4 tsp pepper.
- Bowl #2 2 eggs whisked.
- Bowl 3: 1.5 cups breadcrumbs
- Dive the chicken into the mixture of flour, dip them briefly dip them in whisked eggs Then, and smother them in the breadcrumbs until all of them are coated. Make use of your palms to lightly flatten and smooth the meat just a further after being covered in breadcrumbs.

- Lightly grease the inside of a 9 13 inches x 9 inches casserole dish. Incorporate half the sauce/rigatoni blend. Serve with two chicken slices 1/3 Parmesan cheese and 1 cup of mozzarella cheese.
- Add the remaining Rigatoni. Then add the strips of chicken and any remaining Parmesan along with the mozzarella.
- Bake covered for about 25 minutes. If you prefer a darker crisper, crisper surface you can increase the temperature to 425 degrees and bake for another 5 minutes.
- Sprinkle with fresh parsley. Serving alongside Garlic Bread and Cheese.
2. Chicken Parmesan Casserole Recipe
- 12 ounces penne pasta
- 1 tablespoon olive oil
- 1.5 pounds of boneless skinless chicken breast (see note)
- Salt & pepper
- 36 ounces pasta sauce
- 1 cup mozzarella cheese shredded
- 12 ounces fresh mozzarella cut into 12 slices
- 1/3 cup Panko breadcrumbs
- 1/4 cup Parmesan cheese freshly grated
- Fresh basil chiffonade
- In a large saucepan of water, boil and generously sprinkle salt. Cook pasta according to the package until al dente. Rinse and return to the pot.
- While the pasta cooks set a large pan over medium-high temperature. In the skillet, add cooking oil, and fry the chicken till cooked to perfection, turning it over every 8 minutes, approximately. (The chicken should be cooked to an internal temperature that is 160 to 165 degrees F.) Transfer the chicken to a cutting block and chop or shred it.
- Preheat the oven to 450 degrees F and then grease the interior of a 9-inch by 13-inch casserole dish.
- Add the sauce for pasta as well as chicken and mozzarella shredded into the pasta. Mix well.
- Distribute half of the pasta in your casserole dish’s base. Lay 6 slices of mozzarella on top of the pasta. Pour the remaining noodles into the dish, and place them in the dish for the entire length.
- Mix the Panko Crumbs and Parmesan together, then sprinkle them on the surface of the pasta. The remaining 6 mozzarella slices are on top of the breadcrumbs.

It is possible to use chicken breasts, tenders of chicken breasts or even a ready-to-eat rotisserie chicken purchased from the grocery store to make this recipe. There should be around three cups of cooked chopped or shredded chicken.

- 1 box linguine pasta 10 oz
- 1 tsp olive oil
- 1 lb. chicken breasts (usually around 3)
- 1 cup mozzarella cheese
- 1 jar tomato basil sauce 24 oz (or marinara if preferred)
- 1 cup parmesan cheese, shredded
- 1 Tbsp Italian seasoning
- salt and pepper as desired
- garlic powder as desired
- Preheat the oven until 350 degrees F and grease the casserole dish 9×13 inches with Nonstick Cooking Spray.
- Place the chicken evenly on top of the casserole dish. Add salt and black pepper according to taste. Then, sprinkle the pasta that is not cooked over the chicken.
- Add the tomato paste and broth to the cooked pasta then sprinkle basil as well as Italian spice over it. Cover with foil, and bake for 45 minutes.
- Uncover, then sprinkle with the cheeses and panko breadcrumbs. Sprinkle the panko with cooking spray that is non-stick.
- Bake for another 10 minutes or until the cheese is melty and the breadcrumbs are cooked.
2. Healthy Chicken Parmesan Quinoa Casserole
- 1 cup quinoa, rinsed
- 1 medium green pepper, diced
- 1.5 cup mushrooms, diced
- 1/2 yellow onion, finely diced (~1/2 cup)
- 3 cups Marinara Sauce (any kind of spaghetti sauce will work!)
- 1 cup low-sodium weakling broth (option to sub: vegetable broth or water)
- 1 tablespoon minced garlic
- 1 large egg
- 2 tablespoons flour (I used white whole wheat, but white or gluten-free will work, too!)
- 1 cup shredded parmesan cheese
- 2 teaspoons garlic powder
- 16 oz. boneless skinless chicken breast
- salt and pepper, to taste
- Preheat oven until 375oF. spray a 14-inch 10″ (OR 9-inch 12 inches) ceramic casserole dish* with coconut cooking spray made of oil.
- Make a vegetable preparation by chopping the whole green pepper as well as 1.5 cups of mushroom. Finely chop 1/2 of an onion that is yellow.
- 1. Place 1 cup of uncooked Quinoa on the bottom of your casserole dish. then add veggies.
- Include 3 cups of marinara sauce and 1 cup of chicken broth, and one tablespoon of minced garlic into the casserole dish. Mix all of it together. Set aside.
- In a large bowl, mix flour, and parmesan shredded along with garlic powder. Crack an egg in a bowl of a smaller size and whisk it.
- Prepare the chicken breasts by dipping them in the egg, and then into the parmesan mix making sure that everything is evenly coated. Set the chicken breast on top of the quinoa mix
- Last but not least add the remaining parmesan mix and additional cheese if you wish. Sprinkle with salt and pepper to your liking.
- The baking dish should be covered with tinfoil. Bake at 375oF for 40 mins. After that, remove your baking dish, and cook for another 20 mins or so until the quinoa is cooked completely.
TIPS AND NOTES
- If you’re planning to bake this recipe then a casserole dish made from ceramic will be your best choice. Ceramic cooks your food more quickly than a traditional cake pan This is why you should note it when baking time is set! This is ours. use.
- Vegetarian choice: we tested this delicious dish with eggplant (at least Linley did..I didn’t want to eat it, but it’s fine, I had a little bit) It was delicious! If you’re vegetarian…you have a great option! Cut your hot dogs of eggplant and follow the recipe exactly as the chicken. It is still necessary to bake for 60 minutes since this is how long the quinoa takes to soften.
